Ice cream with ricotta and apricots


Ricotta is a curd cheese. Instead, you can use philadelphia, mascarpone, buco, almetta, etc..
If you were unable to buy a similar cheese, you can use soft curd, which must be rubbed through a sieve.
Instead of apricots, you can use any, fresh or canned berries and fruits.
The specified amount of ingredients makes 8-10 servings.
Ingredients

  • 250 g ricotta
  • 250 ml cream 33-35%
  • 2 yolks
  • 100 g sugar
  • 200 g pitted apricots

Preparation

Dice the apricots.

Grind sugar with yolks (white).

Add ricotta.
Mix.

Whisk the cream.

Add cream to the curd mass.
Mix.

Add apricots.
Mix.

Put the mass in molds (absolutely any molds in which you can freeze are suitable).
Put in the freezer for 5-6 hours (preferably overnight).
